A guide to Seaweed Cooking & Foraging

The Sea Garden is a pocketbook designed for seaweed foragers, “newby” and experienced. It describes the Top Ten edible seaweeds on the Irish coast in detail, with images and drawings of each one to help identify it correctly, recipes and cookery tips for each and information on health benefits and gardening uses.

There is a section on rocky shore ecology and some interesting anecdotes about seaweed as part of the food heritage of the Waterford coast.

Catherine Cleary launched The Sea Garden in March 2013. She described it as being like having the voice of an expert guide you as you forage on the shore. The publication of The Sea Garden is timely, given the issues we are becoming aware of (through, for example, the horsemeat scandal) around how food is sourced and how to find nutritious and healthy ingredients. She praised the design and content and referred to it as “a little book with a big idea”, saying every chef in Ireland should have it.

Neven Maguire, (Chef MacNeans Bistro) giving a cookery demo in the Tower Hotel, Waterford recently, said “this is an excellent little book, very attractive and easy to follow, seaweed is so good for you – definitely worth having on your cookbook shelf!”.
